I think you should consider VJTI College to pursue a CS course. My reasons for choosing VJTI are:
VJTI Bombay is one of the oldest institutes in Mumbai. It offers a number of courses and has a legacy of highly placed and reputed alumni. Their course structure has undergone many transformations in recent years and they have also adopted the latest technology for IT and CS courses.
The integrated course at IIITM Gwalior has two formats: B.Tech + MBA and B.Tech + M.Tech.
Analyzing comparatively, VJTI has a century-old legacy to offer with hundreds of students either going for placements or mostly, further education. IIITM Gwalior is not so famous but does provide placement assurance and modern technological facilities. It completely depends on the student on what kind of career are they looking for and what kind of degree do they want to pursue.
As a student you should check the following areas and take them into consideration while choosing a particular institution.
Research- VNIT, and COEP beats VJTI in these criteria. Students can do research here under college professors on winter vacations.

Student Activities- VNIT excels in expectations than COEP & VJTI with myriad festivals, clubs, and extra-curricular.
Research after Bachelors’- Lots of VNIT students get themselves into research work after their graduation. However, there is no available information for VJTI and COEP.
Considering all the aspects listed above, VNIT seems a better choice for mechanical engineering than COEP Pune and VJTI Mumbai.
You may have confused SPIT (Sardar Patel Institute of Technology) with SPCE (Sardar Patel College of Engineering). SPIT is not an autonomous institute. The courses offered in SPIT are Computers, IT, Electronics, and Electronics and Telecom.

Academics and co-curricular do not depend on the institute only. It is what you make of it. VJTI is the best choice as it provides a good network and exposure.

The preference order of the institutes other than VJTI is as follows.
If you get admission to VJTI you should definitely opt for it. You should consider what course you are choosing and research about the facilities and placements. For example, CS at SPIT has better placement than ME at VJTI or any of the other colleges mentioned here.
Also, autonomous colleges have better administration in MU. They have a better examination schedule, quick result release and you will have higher chances of securing a good CGPA.
Before 2017, the MTech Mechanical department saw only 40%-50% placements with PPOs which were places of internships for students as well; as part of the MTech project. MTech Mechanical in CAD CAM saw 10-15 placements in 2017; most of the students did get internships with Siemens, Fiat Chrysler, and Cummins.
The department has good labs, over 27 faculty members, and 85 seats with a distribution of 18-25 each for the 4 MTech specializations.

The latest data of 2020 placements has not been made available yet. There has been a 20% improvement in the placement rate of MTech students from 2017 into 2019. The BTech level still has a much higher placement rate of about 85%-97%. Students are free to decide through the placement data shared above.
VJTI has been ranked #71st on the NIRF chart in 2020 and Walchand COE ranks #168th on the same. The CSE program at VJTI saw the most placements in 2018 according to the placement data. My friend also faced the dilemma of choosing between VJTI and BITS Goa. He ended up choosing VJTI because of the following reasons.
Comparing the mechanical branches of SPCE and VJTI, VJTI is the definite winner among the two, considering almost all factors like branding, faculty, peers, placement, etc. Mechanical Engineering is one of the best branches of VJTI.
The points below give a brief overview of VJTI and state several reasons supporting the choice.
Therefore, SPCE is in no way comparable to VJTI, the latter being a much better institute in terms of all considerable factors.
Manipal University is ranked 45th, and VJTI is ranked 75th for engineering in India by the NIRF. Both colleges have a wide range of programs. Manipal offers courses in B.Tech, M.Tech, M.Arch, M.Sc, MCA, and Ph.D. programs. VJTI offers courses in B.Tech, M.Tech, MCA, Ph.D., PG Diploma, and After 10th Diploma programs.

Although VJTI and Manipal are on the same level when it comes to placements and teaching quality, students, especially the ones who want to opt for housing, must keep in mind the facilities each college offers to its students while choosing their college of higher education. It is important for students to research the availability of basic necessities so that they can have a good college experience.
Between KJ Somaiya and VJTI, the latter is definitely better. Whether or not you should take a year drop that depends on you and how important is this year to you.
Comparison:
If you compare KJ Somaiya and VJTI, in terms of placement and higher education you will see that the best students from KJ Somaiya do get similar opportunities as VJTI students. One of my friends attended VJTI and got placed in a company that was one of the best to visit KJ Somaiya too. So, he has 4-6 colleagues from KJ Somaiya.
As long as brand value goes, after 5 years of the compilation of your course, no one will care where are you from VJTI or KJ Somaiya.
People will care if you are from IIT though because IIT brand-name sticks.
A word of advice, dropping a year to join VJTI may not be worth it. If you are going to drop a year, try to get into an IIT or IIIT.
